Chicken and Zucchini Poppers

Chicken and Zucchini Poppers
Serves 4
Another healthy and delicious way to cook chicken.

Ingredients
  1. 1 lb. ground chicken breast
  2. 2 c grated zucchini (leave peel on)
  3. 2-3 green onions, sliced
  4. 1 clove garlic
  5. 1 tsp. salt
  6. 1/2 tsp. pepper
  7. 3/4 tsp. cumin (optional)
  8. olive oil, for cooking (or coconut oil)
Instructions
  1. -Toss chicken with zucchini, green onion, cilantro, garlic, salt, and pepper ( and cumin, if using). Mixture will be quite wet.
  2. -Heat a drizzle of olive oil in a medium pan over medium heat. Use a small scoop or a heaped tablespoon to scoop meatballs into the pan. Cook 8-10 at a time for about 5-6 minutes on the first side. Flip and cook an additional 4-5 minutes or until golden brown and the centers are cooked through.
  3. -Serve with guacamole, fresh salsa, or your favorite dip.

Supplements you can choose for a healthy active lifestyle

Many people anxious to reach their weight loss goals turn to over the counter supplements and weight loss drugs. It is almost impossible to go into a drug store without seeing a display of some new miracle weight loss pill or vitamin supplement that claims to improve your performance. The fact is though, that despite the millions of dollars spent on advertising these supplements and the endorsement of a fitness “guru” does not equate to actual results and or benefits. Before trying ANY new drug or supplement do your research and consult with your physician.

It is a hard pill to swallow, but the truth is that most fat-burning supplements and diet pills simply DO NOT WORK. The weight loss that these concoctions provide is illusory at best.

What is a SUPPLEMENT? It is a substance that is a part of your body’s normal physiological processes. NO supplement should produce results like a drug. Supplements are like food.

While most weight loss and performance enhancing drugs are just nonsense, there are a few types that most people can benefit from if they are looking to improve their health. These supplements are also worth taking even if you are not a professional body builder.

Multivitamins

MULTIVITAMINS- Just about anyone can benefit from a daily multivitamin. Just know that they do not BURN FAT or BUILD MUSCLE. Our modern lifestyle, as fast paced and stressed as it is, means that we do not always have time to ensure that we get all of the nutrients that we need. This is especially true for people who are on very rigid weight loss plans or other restricted diets. Add to this the mineral depletion that has become an issue amongst produce growers, and the effect of rapid cooking (i.e. in the microwave) on nutritional value, finding a good daily multivitamn that contains no fillers or binders (things like cork or sand) can improve your overall well-being. Make sure your vitamins are whole food based and organic and you have won half of the battle.

FISH OIL- If there is a miracle supplement out there, it is probably fish oil! This is not a weight loss supplement, but it does provide numerous benefits for health conscious consumers. Fish oil lowers bad cholesterol and triglyceride levels while increasing good cholesterol. it has also shown to improve hair, skin, and nail quality as well as heart, brain, and joint health. Fish oil SUPPORTS fat loss. The fish that have the most fatty acid component in them are salmon and sardines. Vegans and vegetarians who are opposed to consuming fish products can obtain the same benefits from Flaxseed oil.

MEAL REPLACEMENTS- Sometimes we just do not have time to prepare a healthy meal before work or when we are on the go. In these moments, rather than stopping for fast food, meal replacement shakes or bars are often a better substitute. While no shake or bar will actually cause you to lose weight, they often contain a lot of the nutrition of a meal without all the fat. They tend to be high in protein, and if you are making a shake, you can always add fruits and veggies to it to make it even better. Meal replacements usually do not burn fat or build muscle.

Creatine

CREATINE (Monohydrate or Hydrochloride)- Usually bought in flavored powder mixes, Creatine is a protein supplement. Creatine helps you to train harder, build muscle, decrease fatigue, increase strength, and decrease recovery time. It is very popular among athletes because it provides energy without fat or carbohydrates, and supports muscle growth, particularly in those who engage in high intensity sports or weight training. Creatine will help to promote the development of fat-burning muscle mass. Unfortunately, it does not work for everyone.

BCAA (Branched Chain Amino Acids)- They are the building blocks of almost every structure in our body down to our very DNA. Many of these our bodies cannot synthesize, and need to be consumed directly. BCAA products include 3 essential amino acids (Valine, Leucine, and Isoleucine) that are a substrate for energy production, protein synthesis, and support a healthy metabolism. Leucine plays a role in muscle protein synthesis, Isoleucine induces glucose uptake into cells, and Valine helps eliminate excess nitrogen from the liver, regulates blood sugar, and stimulates Central Nervous System (mental functions). BCAA’s slow down catabolism (protein breakdown) of muscles, improve your workout intensity, increase fat loss, improve concentration, decrease fatigue, and stimulates the building of protein in muscle. It is worth noting that these amino acids can be found in our regular diets, particular in protein rich foods such as eggs, as well as whey protein supplements.

Protein Powder

PROTEIN POWDER- It is protein in powder form. You can use this to add more protein in your diet. If you are vegetarian or vegan (there are vegan protein powders on the market) this can be an excellent source of additional protein if you need it. They are made up of JUST protein. There are two very popular protein supplements:
1) Whey- Created as a byproduct of the production of cheese, it is a complete protein with all 9 essential amino acids in it. It can possibly help you to lose weight , aid in lowering cholesterol, improve asthma, and lowering blood pressure. It is mainly used when you want to build lean muscle mass. There are 3 different types of whey protein: Concentrate, Isolate, and Hydrolysate. Whey is best when taken in the morning.
2) Casein- It is a protein in milk that has a slower digestion rate which allows it to slowly and steadily release amino acids, which means a reduction in the breakdown of proteins. It is used to keep long periods of an anabolic environment for the growth of muscles. It is best when used before bed. Casein creates more lean muscle mass and decreases body fat when using it in conjunction with a resistance program and proper nutrition program that you will get from me.

You must remember that there is NO supplement that is a substitute for proper EXERCISE and NUTRITION. If you take these supplements WITHOUT proper exercise and nutrition you will continue to FAIL. You should always work with a Certified Personal Trainer who can help you design the perfect exercise program for YOU and help you take your nutrition and your soul to the next level!

It is so HARD!

Living a healthy life is SO HARD

“It is so HARD!” is a sentence I hear quite a bit from some people who talk to me about losing weight and getting their life back.

“I can’t have any sweets?”

“No alcohol?”

“I can’t have any white pasta or white BREAD?”

“So you mean I cannot have any food that has ANY FLAVOR???”

“But Tamara, what will I do? How will I live? I have an insane sweet tooth! Can’t I have a FEW cheat days? My kids will not eat healthy! My spouse will sabotage me!! But we love to go out to dinner! I don’t have TIME to cook! I don’t know HOW to cook! My Mom/Dad/Aunt/Friend/3rd Cousin just keeps bringing junk into the house and I cannot resist it!”

**Having a lot of issues with your back, knees, feet, heart, hips etc, because of the extra weight you are carrying.

**Not wanting to go to a gym for fear that people will make fun of you.

**Hiding behind other people everytime someone takes a picture, REFUSING to be in pictures at all, OR just using pictures of yourself from 10-15 years ago when you were thinner for all your social media sites.

**Pretending you are full when eating out with others, but in your mind, all you can think about is binging when you get home.

**Hiding junk food wrappers in the trash so others won’t see that you have been binging.

**Hiding food from your family so you can eat it alone later.

**Hearing other children tease your children because of their overweight Mom/Dad.

**Sitting on an airplane having a hard time buckling the seat belt, and feeling really uncomfortable in the seat.

**Listening to family or friends talk with you over and over again about your weight and how they are really concerned about your health.

**The broken record that you play in your head everyday that keeps you TRAPPED in this blackhole of weight loss failure.

**And, allowing almost all of your emotions to be governed by food. HAPPY=FOOD SAD=FOOD MAD=FOOD BORED=FOOD INDIFFERENT=FOOD!

I am sure I have missed a few.

What are YOU going to do?

Living like THIS is what is really HARD. Imagine the freedom you will have once you set yourself free! You have to look at food as nourishment for your body, not as a crutch to make you feel better for that moment. You will NEVER solve any of your problems with emotional eating and or overeating. Ask yourself, “Am I really hungry, or is there something bothering me?” If you are emotionally eating, then try sitting with those emotions, you might actually figure out a way to get through it. You were MADE to get through almost ANY emotional curve ball that is thrown at you.

Try this….I mean ACTUALLY TRY THIS:

-Pick a start date
-Write out your long term and short term weight loss goals
-Surround yourself with people who will support you
-Try journaling (read my blog about journaling for weight loss success)

JOURNALING FOR WEIGHT LOSS SUCCESS

One way quite a few people are able to keep their weight “under control” is to become accountable for everything that they do. There are many ways to do this, and one really effective way that does not cost much is the simple art of JOURNALING. You can start by purchasing a small or medium size note book, a fancy leather bound journal, OR for all you techies…you can use an APP!

Below I have listed my personal favorite app I use on my iPad, and one I use on my Samsung Galaxy phone (Android). Apps these days are so cool, you can add pictures, videos, locations, privacy lock codes, etc.

Why use a journal? Writing down things help to hold you accountable, you actually SEE what you have or have not been doing according to your goals. You should start your journal by writing down what your goals are, long term and short term.

Break down your long term goals into short term goals. Then ACTUALLY incorporate those goals into your permanent schedule each day, week, month:

I am going to lose 50 lbs by December 31, 2014
I am going to lose approximately 8.5 lbs each month
I am going to lose approximately 2.2 lbs each week

I am going to run 24 miles each month
I am going to run 6 miles each week
I am going to run 2 miles on M, W, and F after work

Write down your long term and short term goals

Put your grocery shopping in your schedule permanently on your favorite day. Choose two days and time frames for doing your food prep and put it in your schedule permanently. Do not allow anything to get in the way of these days and times, they are important to your success.

Write down what you are eating and how much exercising you are doing each day…be HONEST with yourself even if you deviated from your meal plan. You can use this food journaling as a way to also be accountable for what you are or aren’t doing to reach your goals.

Write down ANYTIME you feel a craving coming on or just want to deviate from your meal plan. In that moment, STOP…write down what you are saying to yourself to sabotage your meal plan. Write it down BEFORE you eat the unhealthy food. Sit with whatever feelings you are having and actually experience them instead of masking them with food. (I want you to look back after several months entries and see if there is a pattern of a certain type of behavior).

Write down anything you want about how you feel at anytime.

Write down when you are feeling at your lowest each day. Say why/what/who made you feel this way…even if it was YOU.

Write down when you are feeling your best each day. Say why/what/who was involved in making you feel good even if it was YOU.

DO THIS EVERYDAY.

At the end of each day/week/month check off everything you have accomplished. Each month you will soon see that you are closer and closer towards reaching your weight loss goals. Each month you will continue breaking bad habits and increasing your good habits.

REMEMBER THIS: WHAT YOU HAVE BEEN DOING IN THE PAST HAS NOT BEEN WORKING FOR YOU, SO YOU MUST CHANGE WHAT YOU ARE DOING OR YOU WILL KEEP GETTING THE RESULTS YOU HAVE BEEN GETTING.

Weight loss is more of a MENTAL CHALLENGE than a PHYSICAL CHALLENGE. Journaling helps you to knock out your mental challenges.
